Elderberry Bran Muffins - cooking recipe
Ingredients

1/2 c. whole wheat flour
1/4 c. cattail pollen
1 Tbsp. baking powder
1/2 tsp. salt
1 c. bran
1/2 c. dried elderberries
1 egg
1/2 c. milk
2 Tbsp. molasses
1 Tbsp. margarine, melted
Preparation

Cover elderberries with boiling water and let soak 3 hours. Sift together first 4 ingredients.
Add bran and elderberries. Beat egg and mix with milk, molasses and margarine.
Add dry ingredients and mix only enough to dampen all dry ingredients. Fill greased muffin tins 2/3 full and bake at 400\u00b0 for 30 minutes. Makes one dozen.
