Southern Sweet Potato Pie - cooking recipe

Ingredients
    3 medium sweet potatoes
    2 eggs, beaten
    1/4 tsp. salt
    1/2 c. evaporated milk
    1 (9-inch) unbaked pastry shell (pie crust)
    1/4 c. butter or margarine
    1/2 c. sugar
    3/4 tsp. nutmeg
    1 tsp. vanilla
Preparation
    Scrub potatoes; place in saucepan.
    Cover with boiling water and cook until soft.
    Pour off water and peel potatoes while hot. Mash thoroughly, then beat in butter, eggs, sugar, salt and nutmeg.
    Beat until creamy.
    Stir in milk and vanilla.
    Pour into pastry shell.
    Bake at 450\u00b0 for 15 minutes.
    Reduce heat to 300\u00b0 and bake for 25 to 30 minutes or until set.
