Pedernales River Chili - cooking recipe

Ingredients
    4 lb. chili meat
    8 tsp. bacon drippings
    1 large onion, chopped
    2 cloves garlic, chopped
    1 tsp. ground oregano
    1 tsp. cumin seed
    1 string dried mushrooms
    6 tsp. chili powder
    1 1/2 c. canned whole tomatoes
    2 (No. 2 1/2) cans kidney beans
    1 to 6 generous dashes hot pepper
    salt and pepper to taste
    2 c. hot water
Preparation
    Place chili meat, onion, garlic and bacon drippings in a heavy or Dutch pan.
    Cook until light colored.
    Add oregano, cumin seed, chili powder, tomatoes, beans, hot sauce, dried mushrooms, salt and hot water.
    Bring to boil, lower heat and simmer for 1 hour.
    Skim off fat during cooking.
