South Seas Chicken - cooking recipe
Ingredients

1/4 c. light brown sugar
2 Tbsp. cornstarch
1/2 tsp. salt
1/4 c. vinegar
1/4 c. thinly sliced onion
1 broiler-fryer, cut up
1 Tbsp. soy sauce
1 (13 1/4 oz.) can pineapple tidbits
1 c. green pepper strips
6 Tbsp. shortening
Preparation

In a bowl, combine sugar, cornstarch and salt; gradually add vinegar, then soy sauce, pineapple with syrup, green pepper and onion; set aside.
In a large skillet, melt shortening.
Add chicken pieces and brown on both sides.
Cover and simmer 30 to 40 minutes or until tender.
Remove chicken from skillet; add pineapple-green pepper mixture.
Cook over medium heat, stirring constantly, until thickened.
Return chicken to skillet.
Cover and simmer 5 to 10 minutes.
Place rice on serving platter; top with chicken and sauce.
Makes 4 to 5 servings.
