Double Apple Pie(Diabetic) - cooking recipe
Ingredients

6 c. peeled, sliced baking apples
2 1/2 Tbsp. plain flour
2/3 c. unsweetened apple juice concentrate
2 tsp. cornstarch
1 tsp. cinnamon
1/4 tsp. nutmeg
1 (9-inch) pastry shell (top and bottom crust)
Preparation

Preheat oven to 425\u00b0.
Place apples in large bowl.
Coat apples with flour.
In small saucepan combine apple juice, cornstarch, cinnamon and nutmeg.
Stir until smooth.
Cook until thickened.
Pour mixture over apples, mixing gently.
Line pie pan with bottom half of crust.
Add apple mixture to pie pan.
Place top crust on top and crimp edges.
Cut several slits in crust. Bake for 10 minutes at 425\u00b0.
Reduce heat to 375\u00b0 and bake 35 to 40 minutes.
