Carrot Pineapple Cake - cooking recipe
Ingredients

1 c. butter (room temperature)
2 c. sugar
3 eggs
2 1/2 c. flour
1/2 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. vanilla
1 c. grated raw carrots
1 c. drained, crushed pineapple
1 c. dried, shredded coconut
1 c. pecan pieces
Preparation

Preheat oven to 325\u00b0.
Grease 9 x 13-inch pan.
Cream butter, sugar and eggs.
Sift together dry ingredients; add gradually to butter-egg mixture.
Add vanilla, carrots, pineapple, coconut and nuts.
Pour into pan; bake until done, about 45 minutes to 1 hour. Remove from oven and let cool.
Frost with cream cheese frosting.
