Korean Kim Chee - cooking recipe

Ingredients
    1 medium bok choy (or Chinese cabbage)
    2 1/2 tsp. salt
    1 large onion, thinly sliced (or scallions, chopped)
    1 tsp. crushed red pepper flakes
    1 1/4 tsp. cayenne for color
    4 cloves garlic, minced
    1 Tbsp. sugar (optional)
    1/4 tsp. powdered ginger or crushed ginger roots
Preparation
    Thinly slice bok choy into vertical pieces.
    Then sprinkle bok choy with salt.
    Let stand overnight in a cool place or in refrigerator.
