Mushroom And Barley Soup - cooking recipe

Ingredients
    2 Tbsp. butter
    1 yellow onion, chopped
    3/4 lb. mushrooms, finely chopped
    3/4 lb. mushrooms, sliced
    2 Tbsp. flour
    6 c. beef broth
    6 Tbsp. uncooked barley
    juice of 1/2 lemon
    3 Tbsp. parsley, finely chopped
    salt and pepper to taste
Preparation
    Melt butter in soup pot and add onion and all the mushrooms. Cover and steam over low heat for 10 minutes.
    Stir in flour and add beef broth and barley and simmer for about 30 minutes or until barley is tender.
    Add lemon juice and salt and pepper to taste. Garnish with parsley.
    Soup gets richer and thicker the second day.
    Serves 8.
