Crock-Pot Cassoulet - cooking recipe

Ingredients
    1 1/2 c. small white or Great Northern beans
    4 1/2 c. water
    3 slices bacon
    2 medium onions, chopped
    1 lb. each, lamb and pork, cubed
    1 c. dry red wine
    2 Tbsp. tomato paste
    1/2 c. beef stock
    1 carrot, grated
    2 cloves, garlic, minced
    1 tsp. thyme
    1 lb. mild Italian sausage
Preparation
    Soak beans overnight; drain.
    Simmer in water 1 hour; drain and put in crock.
    Saute bacon; saute and brown lamb and pork in drippings.
    Put in crock.
    Add wine, paste, stock with carrot, garlic, salt and thyme; cook covered on low for 6 to 8 hours.
    Add sausage and cook 1 more hour.
    Slice sausage and arrange on top. Makes 8 to 10 servings.
