Panettone - cooking recipe

Ingredients
    1 cake brewer's cake yeast
    5 lb. unbleached flour
    1 lb. butter
    1 lb. sugar
    1 pinch salt
    1 Tbsp. candied orange peel
    3 handfuls raisins
    2 handfuls almonds, sliced
Preparation
    Make a \"well\" or \"volcano\" with the flour.
    Melt butter; let cool a little.
    Add yeast, salt, butter and a little lukewarm water to the well.
    Adding water as needed, integrate ingredients until most of the flour is absorbed.
    Knead until soft but springy.
    Cover with cloth; let rise for 1 hour.
    Punch down dough; let rise for another 45 minutes.
