Sole With Tomato Sauce - cooking recipe

Ingredients
    1 Tbsp. oil
    1 small onion, chopped
    1 stalk celery, chopped
    1 chili pepper, seeded and chopped
    1/4 tsp. ground cumin
    1/4 tsp. ground coriander
    1/4 tsp. ground ginger
    1/2 red pepper, seeded and chopped
    1/2 green pepper, seeded and chopped
    14 oz. canned tomatoes
    1 Tbsp. tomato paste
    salt and pepper
    pinch of sugar
    3 oz. cream cheese
    1 tsp. dried oregano
    pinch of cayenne pepper
    4 pieces fillets of sole
    lime slices to garnish (optional)
    dill to garnish (optional)
Preparation
    Heat oil in heavy based pan and cook onion, celery, chili pepper and spices for 5 minutes over very low heat.
    Add red and green peppers and the next 4 ingredients and bring to boil.
    Reduce heat and simmer 15 to 20 minutes, stirring occasionally.
    Set aside while preparing the fish.
