Tropical Ambrosia - cooking recipe

Ingredients
    1 can (20 oz.) pineapple tidbits
    1 pkg. (3.4 oz.) instant coconut cream or vanilla pudding mix
    1 carton (8 oz.) whipped topping, thawed
    4 Tbsp. coconut
    maraschino cherries
Preparation
    Drain pineapple, reserving the juice; set pineapple aside. In a mixing bowl, combine the pineapple juice and pudding mix; beat on low speed for 2 minutes or until thickened.
    Fold in the whipped topping.
    Stir in pineapple and 3 tablespoons of the coconut.
    Transfer to a serving bowl.
    Garnish with remaining coconut, cherries and cherry juice if desired.
    Chill.
