Cranberry-Glazed Pork Roast - cooking recipe

Ingredients
    4 lb. boneless pork loin roast
    2 tsp. cornstarch
    1/4 tsp. cinnamon
    1/8 tsp. salt
    1/2 tsp. grated orange peel
    2 Tbsp. orange juice
    2 Tbsp. dry sherry or any other good wine
    1 (16 oz.) can whole berry cranberry sauce
Preparation
    In a small saucepan, stir together all ingredients except pork.
    Cook, stirring, over medium heat until thickened; set aside.
    Place roast in shallow baking dish.
    Roast at 325\u00b0 for 45 minutes.
    Spoon 1/2 cup glaze over roast and continue roasting for 30 to 45 minutes more, until internal temperature reaches 155\u00b0 to 160\u00b0.
    Let stand for 10 minutes and then serve with remaining sauce.
    Save some of the glaze and serve hot at the table.
