Brussels Sprouts And Walnut Au Gratin - cooking recipe

Ingredients
    2 (10 oz.) pkg. frozen Brussels sprouts, cooked and drained
    1/2 c. grated sharp cheese
    1/4 c. herb seasoned bread crumbs
    1/3 c. chopped walnuts
    1 Tbsp. butter, melted
    1/4 lb. bacon (4 to 6 slices)
    1 medium onion, chopped (about 1 1/4 c.)
    1 clove garlic, minced
    1 c. raw rice
    2 pkg. (10 oz. each) frozen black-eyed peas
    2 c. water
    1 tsp. salt
    1 medium tomato, chopped (about 1 c.)
    2 Tbsp. chopped parsley
Preparation
    In a medium saucepan cook the bacon over medium heat until crisp, about 10 minutes.
    Reserving the fat in the saucepan, drain the bacon on paper towels.
    Crumble and set aside.
