Summer Chicken Salad Sandwiches - cooking recipe

Ingredients
    3 cu. cubed chicken breasts
    1/2 c. grape halves
    1/4 c. minced scallions
    1.4 c. snipped fresh parsley
    2 Tbsp. chopped pecans
    1/2 c. nonfat plain yogurt
    2 Tbsp. fat-free mayonnaise
    1 1/2 tsp. curry powder
    6 whole wheat Kaiser rolls
    2 nectarines, peeled, seeded and thinly sliced
Preparation
    In a large bowl, combine chicken, grapes, scallions, parsely adn pecans.
    In a cup, combine the yogurt, mayonnaise and curry. Mix the dressing with the chicken.
    Divide the chicken among the rolls.
    Place a nectarine slice in each sandwich.
    Serves 6.
    Per serving:
    346 calories, 9 grams fat (24% of calories), 54.8 milligrams cholesterol, 405 mg. sodium, 4.9 g. dietary fiber.
