Black Walnut Carrot Cake - cooking recipe
Ingredients

3 c. self-rising flour, sifted
2 c. sugar
2 c. corn oil
6 eggs
1 tsp. allspice
1 tsp. cinnamon
1 tsp. nutmeg
1/4 c. black walnuts
2 c. carrots
Preparation

While grating carrots, allow the sugar to sit at room temperature in oil.
Separate the eggs.
Fold in beaten egg whites before pouring mixture into Bundt pan.
Mix flour, oil, sugar mixture and beaten egg yolks together.
Mix in grated carrots, spices and nuts.
Fold in beaten egg whites and gently blend. Pour into greased Bundt pan and bake at 350\u00b0.
