Cheese Souffle - cooking recipe
Ingredients

1 c. milk
3 Tbsp. all-purpose flour
1 Tbsp. butter or margarine
4 large eggs
1 Tbsp. cornstarch
1 1/4 c. shredded cheese
dash of salt
dash of freshly ground pepper
Preparation

In a heavy saucepan, combine milk and flour.
Bring to a boil, stirring.
Cook 3 to 4 minutes.
Add butter.
Beat until melted. Remove pan from heat.
Separate eggs.
Add egg yolks, one at a time, and beat until incorporated.
Add cornstarch, shredded cheese and seasonings.
Beat egg whites until stiff peaks form.
Carefully fold into cheese mixture.
Lightly grease a souffle dish (or use individual serving dishes).
Carefully pour mixture into dish. Bake at 350\u00b0 for about 40 minutes for large souffle, 25 minutes for individual souffle.
Do not open oven door during baking time. Serve immediately.
One hour total, 40 minutes baking time.
