Corn Muffins - cooking recipe

Ingredients
    1/3 c. shortening
    1/3 c. sugar
    1 egg, beaten
    1 1/4 c. milk
    1 c. flour
    4 tsp. baking powder
    1/2 tsp. salt
    1 c. corn meal
Preparation
    Preheat oven to 425\u00b0. Cream shortening and sugar; add egg and milk. Add flour sifted with baking powder and salt. Add corn meal, stirring only enough to mix. Fill greased muffin pans 2/3 full; bake in hot oven for 25 minutes. Makes 1 dozen.
