Eggplant Patrice - cooking recipe

Ingredients
    1 small eggplant
    2 medium green peppers, chopped
    2 medium onions, chopped
    3/4 lb. sharp Cheddar cheese, sliced 1/8-inch thick
    salt
    pepper
    garlic salt
    4 medium tomatoes, sliced
Preparation
    Slice unpeeled eggplant 1/4 inch thick.
    Parboil until partially tender.
    Place layer of eggplant slices in large casserole which has been sprayed with cooking spray.
    Add layer of sliced tomatoes.
    Fill spaces with chopped green peppers and onions.
    Sprinkle lightly with each of the seasonings.
    Add layer of cheese and repeat until casserole is filled, ending with cheese. Cover; bake at 400\u00b0 about 1/2 hour.
    Remove cover, reduce heat to 350\u00b0 and cook until sauce thickens and is golden, about 1/2 hour. Serves 6.
