Ingredients

1 envelope unflavored gelatin
1/4 c. water
1 1/2 c. dried apricots
1 Tbsp. flour
2 Tbsp. orange peel, grated
1 tsp. vanilla
2 oz. dietetic chocolate coating, melted
Preparation

Sprinkle gelatin over water and allow to soften for 5 minutes. Heat and stir until gelatin is dissolved.
Combine apricots, flour and orange peel in food processor or blender.
Work until finely chopped.
Add to gelatin.
Add vanilla and stir until completely blended.
Line an 8-inch pan with waxed paper.
Spread fruit mixture evenly; set aside until cool and firm.
Cut into 1-inch squares.
Dip in melted chocolate.
