Summer Spaghetti With Tomato And Mozzarella Sauce - cooking recipe

Ingredients
    6 to 8 ripe tomatoes, peeled, seeded and coarsely chopped (reserve juice) or 28 oz. can tomatoes
    1/2 lb. Mozzarella cheese, coarsely shredded
    1/4 c. fresh basil leaves, minced
    5 Tbsp. olive oil
    2 cloves garlic, minced
    1 Tbsp. fresh parsley, minced
    salt and pepper to taste
    1 lb. pasta, freshly cooked and drained
Preparation
    Combine tomatoes, Mozzarella cheese, basil, olive oil, garlic, parsley, salt and pepper and reserved juice in bowl; let stand at room temperature for 1 hour.
    When ready to serve, combine fresh cooked pasta and sauce until cheese is melted; serve immediately. Enjoy!
