Scottish Oat Cakes - cooking recipe
Ingredients

1/2 c. boiling water
1/2 tsp. soda
2 c. flour
1 tsp. baking powder
1 tsp. salt
2 c. 40% bran flakes
2 c. rolled oats (not instant)
1 1/4 c. sugar
1 1/4 c. shortening (not oleo or butter)
Preparation

Preheat oven to 425\u00b0.
Mix and set aside water and soda to cool; mix all dry ingredients.
Cut in shortening.
Finally add soda mixture.
Divide dough into thirds.
Pat out on thinly-floured surface into a rectangular shape.
Roll to 1/4-inch thickness.
Cut into 2 x 3-inch rectangles, trimming edges.
With spatula, set on cookie sheet.
They spread.
Barely brown the edges, no more than 8 minutes.
They will still be light in color.
Remove from pan immediately.
They crisp up as they cool.
Cookie sheet must be washed and cooled between batches or use 3 cookie sheets.
Makes about 3 dozen.
