Ring Rice Chantilly - cooking recipe
Ingredients

3/4 c. sugar
1/8 tsp. salt
1 envelope unflavored gelatin
2 c. milk
2 eggs, beaten
1 c. cold, cooked rice
2 tsp. vanilla extract
1/2 c. whipping cream, whipped
sliced, sweetened, fresh fruit of choice
Preparation

Stir together the sugar, salt and gelatin in a heavy 1 1/2-quart saucepan.
Add milk and eggs; mix well.
Place over medium-low heat and stir constantly until mixture coats a metal spoon; set aside to completely cool.
Fold in rice and vanilla. Chill just until mixture starts to thicken.
Fold in whipped cream. Coat a 1-quart ring mold lightly with cooking spray.
Gently spoon mixture into mold using spatula to smooth top.
Chill until firm. Carefully unmold onto serving plate.
Fill center with sliced and sweetened fruit, such as strawberries, raspberries or peaches.
