Pink Rice - cooking recipe

Ingredients
    1 c. long-grain rice
    2 c. water
    2 Tbsp. butter or margarine
    2 c. chicken stock
    1/2 tsp. salt
    2 tsp. paprika
    1/4 tsp. ground white pepper
Preparation
    Soak rice in water in a heavy saucepan for 30 minutes.
    Drain and discard water.
    Saute rice in butter in the same pan.
    Add stock, salt, paprika and pepper.
    Stir to blend spices.
    Cover; bring to a boil and cook 12 to 15 minutes or until rice is almost tender.
    Remove from heat and let stand, covered, until ready to serve.
    Serves 4 to 6.
