Squash Casserole - cooking recipe

Ingredients
    2 lb. yellow crookneck squash
    2 small pkg. herb stuffing mix
    1 can cream of mushroom soup
    1 (8 oz.) container sour cream
    1 stick margarine
    1/2 tsp. salt
    1/4 tsp. pepper
    1 medium onion, diced
    1 grated carrot (optional)
Preparation
    Cook cubed squash and onion 5 minutes, until tender.
    Drain. Mix soup, sour cream, salt and pepper with squash.
    Melt butter and mix with stuffing.
    Put half of stuffing in a baking dish. Put squash mixture on top, then top with remaining stuffing.
    Bake at 350\u00b0 for 25 minutes.
