Mock Potato Salad - cooking recipe
Ingredients

2 c. cauliflower flowerets
1 c. celery, diced
1/4 c. onions, diced
1/4 c. sweet red pepper, diced
1 Tbsp. chopped sweet pickle
2 Tbsp. low calorie mayonnaise
salt and pepper to taste
Preparation

Parboil cauliflower for 5 minutes.
Cool.
Separate into small pieces.
Combine with remaining ingredients.
Toss lightly. Sprinkle with chopped parsley.
