Chicken Parmigiana With Spinach Noodles - cooking recipe

Ingredients
    24 saltine crackers, crumbled
    1 oz. grated Parmesan cheese
    15 oz. boneless, skinless chicken breasts, flattened
    dash of black pepper
    1 beaten egg
    1 Tbsp. corn oil
    1/2 tsp. oregano
    2 c. cooked spinach noodles
    2 Tbsp. margarine
    1 c. tomato sauce
    2 oz. Mozzarella cheese, shredded or grated
Preparation
    Combine crackers, 3/4 ounce Parmesan and black pepper.
    Dip chicken breast into egg; dredge in cracker mixture to coat. Combine 2 teaspoons margarine and 1 teaspoon corn oil in skillet. Add chicken; cook until slightly browned (approximately 1 to 2 minutes on each side).
    Remove from skillet and set aside.
