Chicken Cutlets With Green Pepper Vinaigrette - cooking recipe

Ingredients
    1 1/2 Tbsp. olive oil
    4 boneless, skinned chicken breast halves (1 lb.)
    1/4 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. leaf thyme, crumbled
    2 large sweet green peppers, cut and seeded
    1 or 2 medium sized onions
    3 Tbsp. balsamic vinegar
Preparation
    Heat 1/2 tablespoon oil in a large skillet over medium heat. Add chicken; saute until just cooked through, 3 to 4 minutes on each side.
    Transfer to platter.
    Sprinkle chicken with half the salt, pepper and thyme.
    Cover to keep warm.
