Guadalupe Fried Catfish - cooking recipe
Ingredients

3 lb. catfish fillets, cut thin
5 lb. potatoes, cut into thin French fries)
2 limes
4 large onions, sliced in rings
1 c. flour
1 c. corn meal
2 gal. peanut oil
Tony Chachere Cajun seasoning
Preparation

Divide oil between two 12-quart pots and bring up to 350\u00b0 (fish in one, potatoes and onions in the other). Slice fish. Season with lime juice and seasoning mix in 1 gallon Ziploc, combined with flour and corn meal.
Drop fish in hot oil and fry until done. Season onions and fries with Tony's seasoning and fry until done.
Serves 6 to 10 people. Serve with red sauce and tartar sauce.
