Christmas Fruitcake Muffins - cooking recipe

Ingredients
    1 1/2 c. all-purpose flour
    1/4 c. brown sugar
    1 Tbsp. baking powder
    1/4 tsp. salt
    1 egg, lightly beaten
    1/2 c. milk
    4 Tbsp. (1/2 stick) unsalted butter, melted
    1/2 c. diced red and green candied cherries
    1/2 c. mixed diced candied pineapple
    1/2 c. seedless raisins
    2 tsp. grated lemon zest
    2 tsp. grated orange zest
Preparation
    Preheat the oven to 400\u00b0.
    In a mixing bowl, stir together the flour, sugar, baking powder and salt.
    In a separate bowl, stir together the egg, milk and butter, then stir them into the dry ingredients to make a lumpy batter.
    Fold in the remaining ingredients.
    Spoon the batter into greased muffin cups, filling them about two-thirds full.
    Bake until well risen, golden and a thin wooden toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes.
    Makes 12 muffins.
