Orange Chicken Salad - cooking recipe
Ingredients

2 c. chicken breast, cut into bite sized pieces*
8 oz. salad type pasta
1/2 tsp. orange peel
2 oranges, peeled and cut into chunks or small can mandarin oranges, drained
1/2 c. green onions, sliced
1/2 c. mayonnaise
1/2 c. nonfat plain yogurt
1/4 c. orange juice
1 tsp. curry powder (optional)
salt and pepper to taste
Preparation

*If using uncooked chicken, spray saute pan with oil and brown the chicken.
Add orange juice and peel.
Cover pan and simmer on low heat about 5 minutes, until chicken is cooked.
Cool and add to salad with juice.
If using cooked chicken, add the orange juice and peel to dressing.
