Occident(100% Whole Wheat Bread) - cooking recipe

Ingredients
    2 pkg. active dry yeast
    1 1/3 c. warm water
    6 c. 100% whole wheat flour
    1 c. milk, scalded
    1/4 c. soft shortening
    2 tsp. salt
    1/4 c. firmly packed brown sugar
Preparation
    Dissolve yeast in warm water; let stand 5 minutes.
    Combine milk, salt, brown sugar and shortening to milk; cool to lukewarm. Add dissolved yeast; mix well.
    Add half of the flour; mix well. Work in remainder of flour.
    Turn dough onto lightly floured board; shape into several balls.
    Cover and let rest 10 minutes. Knead for 10 minutes; place in greased bowl.
    Cover and let rise in warm place for 1 hour and 45 minutes.
    Punch down; cover and let rise another hour.
    Divide in half; cover and let rest 10 minutes.
    Shape into loaves and place in greased bread pans. Cover and let rise in warm place, about an hour.
    Bake.
