Spring Creek Cafe'S Sweet Potato Pie - cooking recipe
Ingredients

4 eggs, lightly beaten
32 oz. cooked sweet potato meat
2 tsp. ground cinnamon
1/2 tsp. ground cloves
3 c. (two 12 oz. cans) Carnation evaporated milk
2 (9-inch) unbaked pie crusts (deep dish)
1 1/2 c. granulated sugar
1 tsp. salt
1 tsp. ground ginger
1/2 tsp. ground nutmeg
1/2 tsp. allspice
Preparation

Process sweet potato meat in blender.
Combine, in the following order:
eggs, sweet potato meat, sugar, salt, cinnamon, ginger, cloves, nutmeg, allspice and undiluted evaporated milk. Pour into pie crusts.
Bake in preheated 425\u00b0 oven for 15 minutes. Reduce baking temperature to 350\u00b0; bake an additional 1 to 1 1/2 hours, or until sharp knife inserted near center comes out clean. Cool.
Garnish with whipped topping; sprinkle with ground nutmeg. Makes 2 (9-inch) pies.
