Rice Dressing - Port Arthur Style - cooking recipe

Ingredients
    4 c. raw cooked rice
    2 bell peppers (medium)
    3 stalks celery
    1 large onion
    1 small ground meat
    1 pkg. chicken gizzards
    1 pkg. chicken livers (optional)
Preparation
    Boil your gizzards and liver.
    Chop it up into small parts. Cut up bell peppers, onion and celery.
    Cook rice.
    While rice is cooking, begin to make a brown gravy with flour and oil.
    When gravy is dark brown, add your ground meat, gizzards and liver. Add a cup of water and let it simmer.
    Add your rice and let stand for 10 minutes.
