Baked Creamed Potatoes - cooking recipe

Ingredients
    1 medium onion, chopped fine
    3 Tbsp. green pepper, chopped
    4 Tbsp. butter or margarine
    1 Tbsp. chopped pimento
    2 1/2 Tbsp. flour
    2 c. milk
    3 c. cubed, cooked potatoes
    3/4 c. shredded sharp cheese
    salt and pepper
Preparation
    Cook onion and green pepper in butter about 5 minutes.
    Stir in pimento and flour.
    Add milk gradually; stir and cook until thickened.
    Season to taste.
    Add potatoes.
    Pour into 1 1/2-quart casserole.
    Top with cheese.
    Bake at 350\u00b0 for about 30 minutes or until bubbly.
    This can be prepared ahead of time, stored in refrigerator and baked before serving.
