Pickled Beets - cooking recipe

Ingredients
    1 gal. sliced beets
    1 c. vinegar
    1 c. sugar
    1 Tbsp. whole pickling spice (optional)
    1 c. water or beet juice
Preparation
    Drain beets; save 1 cup beet juice.
    Add other ingredients and pour over beets.
    Refrigerate overnight.
    Keeps several days.
