Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    2 c. grated sharp cheese
    2 c. cracker crumbs
    1 1/2 c. milk
    1 stick margarine, melted
    4 eggs
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Cook eggplant until mushy.
    Drain.
    Add ingredients.
    Mix well. Bake at 325\u00b0 to 350\u00b0 for 25 to 30 minutes.
    Yields 6 to 8 servings.
