Chicken Zamboanga(Serves 4) - cooking recipe
Ingredients

1 pkg. chicken thighs
1 can regular cream of mushroom soup
2 oz. whipped cream cheese
2 Tbsp. ripe olives
1 tsp. grated ginger root (not ground ginger)
1/16 tsp. curry powder (I like curry, so I sprinkle it on)
Preparation

In large shallow baking pan, place chicken skin side up in single layer.
In bowl, mix undiluted soup, cream cheese, olives and ginger.
Spread mixture evenly over chicken.
Sprinkle curry on chicken.
Bake, uncovered, 1 hour or until fork-tender.
To serve, place chicken on rice and pour soup mixture over all.
