Light Dessert - cooking recipe

Ingredients
    1/2 c. unsweetened orange juice
    1/4 c. sugar
    2 Tbsp. grated orange rind
    1 tsp. cornstarch
    1 (16 oz.) frozen unsweetened sweet cherries, thawed
    1/3 c. light rum
    2 c. vanilla ice milk
Preparation
    Combine first 4 ingredients in a large skillet, stirring well. Place over medium heat and bring to a boil, stirring constantly. Reduce heat and simmer 2 to 3 minutes or until thickened.
    Remove from heat; stir in cherries.
    Place rum in a small long handled pan, heat just until warm.
    Ignite with a long match, and pour over cherry mixture.
    Stir gently until flame dies down.
    Serve immediately over 1/3 cup portions of ice milk.
    Yields 6 servings, 182 calories and 1.9 g fat per serving.
