Red Bell Peppers Pesto And Shrimp - cooking recipe
Ingredients

2 Tbsp. olive oil
4 large red bell peppers, cut small
1 c. diced carrots
1 c. diced celery
3 cloves garlic, diced
1 Tbsp. oregano
1 lb. fresh, cleaned shrimp
1 (14 oz.) can diced tomatoes
2 c. pesto
1 c. water
1 (15 oz.) can tomato sauce
salt and pepper to taste
1 lb. pasta
Preparation

In large skillet, saut peppers, carrots, celery, garlic and oregano.
Add diced tomatoes, pesto, water, tomato sauce, salt and pepper.
Simmer 5 minutes. Add shrimp. Cook only until shrimp turn pink. Serve over cooked and drained pasta. Sprinkle with Parmesan cheese
