Irishmen'S Delight - cooking recipe
Ingredients

1/2 lb. vanilla wafers
16 graham crackers (approximately)
3 eggs, lightly beaten
1/2 c. butter, melted
2 flat cans crushed pineapple, thickened with 1 Tbsp. cornstarch and cooled
3/4 pt. whipped cream
Preparation

Sprinkle wafers and crackers (crushed with rolling pin) on oiled paper in large cake pan, leaving not quite half of mixture for the top.
Spread beaten eggs on top as smoothly as possible. Add melted butter; spread evenly.
Spread cooled pineapple on top. Spread with whipped cream sweetened with a little sugar. Sprinkle the remaining crumb mixture on top.
Press down firmly. Refrigerate overnight.
