Rhubarb Muffins - cooking recipe

1 1/4 c. brown sugar
1/2 c. vegetable oil
2 tsp. vanilla
2 egg whites
1 c. buttermilk
2 1/2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 1/2 c. diced rhubarb
1 tsp. cinnamon
1/2 Tbsp. butter
1/3 c. brown sugar
Preparation

Mix together 1 1/4 cups brown sugar, oil, vanilla, egg whites and buttermilk.
Stir in the flour, salt, soda and baking powder. Fold in the rhubarb. Mix together the cinnamon, butter and 1/3 cup brown sugar. Scatter over the muffins. Bake at 350\u00b0 for 20 minutes.
Makes approximately 20 muffins.
