Potato Candy - cooking recipe

Ingredients
    2 lb. confectioners sugar
    1 tsp. vanilla extract
    1 small potato
    dash of salt
    peanut butter (smooth or creamy)
Preparation
    Prepare potato as if making mashed potatoes.
    Put in 2-quart mixing bowl.
    Add vanilla; gradually mix in confectioners sugar until it has formed into soft dough.
    Sprinkle counter with extra confectioners sugar, roll out dough and spread a light coating of peanut butter all over.
    Roll like a jelly roll.
    Slice about 1/2 inch thick like pin wheels.
    Put in cookie tin and place in refrigerator.
    Keeps forever. For the holidays vary the colors with food coloring.
