Sauteed Doves - cooking recipe
Ingredients

6 doves, split
1/2 c. butter
2 Tbsp. celery leaves, chopped
1 c. vermouth or dry white wine
1/4 c. minced onion
1/2 tsp. tarragon
salt and pepper
Preparation

Saute doves in butter 5 minutes until browned.
Add wine, onion, celery, salt and pepper.
Cover and simmer over low heat 20 minutes.
Add tarragon and simmer uncovered 15 minutes or until tender.
