Eggplant Casserole - cooking recipe
Ingredients

2 large eggplant
1 medium onion
1 bell pepper
1 clove garlic
3 eggs, beaten
1 tsp. Worcestershire sauce
1 can Ro-Tel tomato and chili peppers
1 can condensed cream of mushroom soup
2 c. shredded Cheddar cheese
1/2 stick butter
2 c. cracker crumbs
salt and pepper to taste
Preparation

Cook eggplant until tender, drain well and mash.
Add all other ingredients except cheese, cracker crumbs and butter.
In greased medium-size casserole, layer the eggplant mixture, cheese and cracker crumbs, using about half of each in each layer.
Top with crumbs and dot with butter.
Bake at 350\u00b0 for 50 to 60 minutes.
Serves 6 to 8.
