Spinach Fettuccine(With Carrots, Shrimp And Snow Peas) - cooking recipe
Ingredients

4 large shrimp, peeled, deveined and sliced lengthwise in half
2 oz. dry spinach fettuccine
1 tsp. cornstarch
1/2 c. orange juice
2 tsp. butter
1/2 c. snow peas
1/2 c. chopped tomato
1 carrot, cut into curls
1/4 c. mushrooms, sliced
fresh chives for garnish
Preparation

Prepare
fettuccine
according
to
package directions. Meanwhile, blend
cornstarch
and
orange
juice together in a small bowl until smooth; set aside. In heavy skillet over high heat in melted butter, saute shrimp, snow peas and tomato just until shrimp curl and become opaque, about 2 minutes.
Stir in orange sauce; cook until sauce thickens, about 1 minute.
When pasta is just
about
al
dente,
toss in carrot curls, cook 1 minute and
drain.
Toss
with
sauce and mushrooms and season with fresh
ground pepper, garnish with fresh chives.
Makes 2 servings.
