Potato Cheese Soup - cooking recipe
Ingredients

4 c. sliced white potatoes
2 c. vegetable stock or water*
1 onion, chopped
1 Tbsp. olive oil
5 sprigs parsley, chopped
1 c. grated Monterey Jack cheese
2 Tbsp. unsalted butter
1/2 tsp. pepper
1/4 tsp. garlic powder
1 c. soy drink or nonfat milk
Preparation

Steam potatoes until tender.
Reserve cooking water.
Saute onion in oil.
Place some of the potatoes, potato water and onion in blender until smooth.
Return mixture to pot and add milk. Stir continuously.
Add cheese, butter, parsley and seasoning.
Do not boil.
