Dried Pea Soup - cooking recipe

Ingredients
    3 c. field peas or split peas
    2 lb. salt pork
    1 onion, sliced
    1 carrot, sliced
    1 celery stalk, sliced
    1 pt. strong chicken stock
    1 tsp. summer savory (sauriette)
Preparation
    Put the peas in cold water first thing in the morning.
    At 10 o'clock, put peas in kettle with a gallon of water, salt pork, onion, carrot and the celery.
    When simmered for 1 1/2 hours, add the chicken stock and summer savory.
    Simmer for another 1 1/2 hours.
    Rub through a strainer and enjoy.
