Shrimp And Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplant, cubed, boiled and drained
    1/2 c. onions, chopped
    1/2 c. celery, chopped
    1/2 c. bell pepper, chopped
    4 Tbsp. oleo
    1 lb. cut up shrimp
    7 slices toasted bread, softened in 1 c. water
    2 eggs, beaten
Preparation
    Saute onion, celery and bell pepper in oleo.
    Add shrimp, cook a few minutes.
    Add eggs to eggplant.
    Add shrimp mixture and toast.
    Mix well. Pour in casserole and top with bread crumbs and dot with oleo.
    Bake 30 to 45 minutes at 350\u00b0.
