Cucumber Cinnamon Rings - cooking recipe

Ingredients
    2 gal. large cucumber rings (about 15 cucumbers)
    2 c. dehydrated lime
    8 1/2 qt. water
Preparation
    Put rings in lime water; let stand 24 hours.
    Drain rings; wash in cool water.
    Pour cold water over rings; soak for 3 hours and drain.
    Add 1 cup vinegar, 1 tablespoon alum and 1 small bottle red food coloring.
    Water to cover.
    Heat and simmer for 2 hours. Drain.
    Makes 4 to 5 quarts.
